How to use filling tips

Filling tips are best used with round, yeast risen pastries like doughnuts or cupcakes. The interior is very airy thanks to the yeast so there is ample room for your filling. Denser and tighter pastry varieties don’t lend themselves to filling as easily. For all kinds of pastry, wait until it has cooled down to room temperature. If the pastry is too hot, your filling will melt. Place a filling tip into a pastry bag and add chocolate ganache, buttercream or jam. There are endless possibilities on the fillings. Gently push the filling tip into the middle of your pastry. Then put a little pressure on the pastry bag to squeeze out slowly just enough filling into the pastry.
